Who doesn’t love donuts?

You can dislike veggies, meats, spices, even chocolate (if you’re a little crazy), but it would be hard to find someone who doesn’t love a good donut. Round donuts, filled donuts, twists, crisps, fruit flavors, custard, creme, hot right now, dunked in coffee, there are so many to choose from! But when you live in a small town, a really good donut can be hard to come by. That’s why I tried my luck this week with a little flavor inspired by my love of warm spices and breakfast foods, French Toast donuts with a maple glaze!

Ingredients

2 cups whole milk

1 pkt active yeast

1/4 cup sugar

1 1/2 sticks (10 tblspns) butter, melted

2 eggs lightly beaten

4 cups flour

1 tsp cinnamon

1/4 tsp nutmeg

1/8 tsp ground clove

1/4 tsp ground ginger

dash salt

Glaze:

2 cups powdered sugar

4 tablespoons cold water (more as needed)

1/4 cup maple syrup

Directions

  1. warm milk to 105 degrees, warm enough to activate the yeast, not too hot or it will kill the yeast

  2. add yeast and sugar to the warm milk in a large bowl

  3. let rise 10 minutes

  4. meanwhile, melt butter and beat the eggs lightly

  5. after yeast mixture is frothy, combine with butter and eggs

  6. lightly sift flour and spices together

  7. add flour mixture to wet ingredients until combine, and then work the dough about 3-5 minutes

  8. turn dough into a greased bowl and cover with plastic wrap, let cool for at least 2 hours in the refrigerator, overnight is fine

  9. after dough is chilled and firm, turn onto a floured surface and roll to 1/3 inch thickness

  10. cut circles from the dough (you can use two biscuit cutters, just try and get the center circle as even as possible)

  11. let the cut dough rise for an hour

  12. while dough rises, prepare the glaze by whisking all ingredients together

  13. heat vegetable or other mild oil (vegetable shortening is good), heat up to 375, be sure the oil is hot or you will have greasy heavy donuts. It should bubble and float immediately

  14. cook 60-90 seconds on each side, until golden brown and then set on a cooling rack

  15. pour or drizzle the glaze over top and enjoy!
